Ingredients:
1/2 C. sugar
1/2 C. butter, softened
2 T. milk
2 tsp. vanilla extract
1 C. all-purpose flour
1 1/2 tsp. baking powder
1 pinch salt
Directions:
Preheat oven to 350 F, 180 C
Combine butter and sugar in a bowl, mix with a mixer until it's light and fluffy, about 45 seconds.
Add vanilla and milk to butter/sugar mixture, you can be flexible with the amount of vanilla you use. Almond extract might also be good, although we haven't tried it.
In a small, separate bowl, sift flour, baking powder, and salt.
Combine dry ingredients into the wet and mix until blended. Add a little flour if dough is too sticky.
Chill dough for up to 30 minutes.
Now, you can do a couple of things,
* Roll dough out on parchment paper, cut with cookie cutters and pull away the scrap, re-roll and cut until dough is gone. (Or eat the scraps!) Be sure to leave about 1/2" between cookies because they will spread.
* Hand roll dough into balls, dip one side in sugar and place sugar side up on parchment, use a glass or your hand to flatten to about 1/2" thickness.
Bake for 8-10 minutes, until bottom is lightly golden. Cookies will not be browned.
These are our Santa cookies and are perfect for frosting and decorating. I use basic powdered sugar and milk icing with food coloring. Delicious!
